Ingredients for 12 pieces:
1 Pack baker’s yeast
1 pinch of salt (3g)
1 piece egg yellow (1 egg yolk)
500ml cooking oil
200g apricot jam
Mix the flour, dry yeast, sugar and salt in a bowl.
Add the egg yolk, the lukewarm milk and the butter and knead everything into a smooth dough. Cover the dough and leave it to rise until its volume has doubled.
Form 12 balls from the dough and let them rise for another 30 minutes.
Heat the oil (140-150ºC) in a pot. Fry the balls in portions in the hot oil for in total 6 minutes. After 3 minutes turn the balls once. Drain them on kitchen paper and then fill them with the apricot jam using a pipping bag.
